| For the pastry | |||||||
|
300g flour 200g fresh butter 100g icing sugar 1 egg yolk
|
Mix the butter with the flour. Add the icing sugar and the egg yolk. Mix until smooth. Use 2/3 of the pastry for the base and bake in a deep pie dish at 175 Celsius for 10 minutes. Leave to cool. |

| For the filling | |||||||

1kg finely sliced apples 100g castor sugar 75g flour 2 teaspoons cinnamon 1 egg yolk for brushing

Peel the apples and finely slice them. Mix them with the sugar, cinnamon and flour. Pour the apple mixture onto the pre-baked base. Roll out the rest of the pastry and cover the pie. Make 8 or 10 little apples (or other forms) with the rest of the pastry and place over the top of the pastry. Brush the pastry with the egg yolk and sprinkle some cinnamon and sugar. Bake at 175 Celsius for 40-50 minutes until golden. Remove, and put on a wire rack and leave to cool. |
